This colorful gluten-free quinoa salad is perfect for a light and nutritious lunch.

Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped parsley
  • 2 tbsp olive oil

  • Salt and pepper to taste

Assembly
