These soft and chewy gluten-free chocolate chip cookies are the perfect treat for any time of the day.

Ingredients

  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter (or dairy-free butter), softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup gluten-free chocolate chips

Oven

Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the gluten-free flour, baking soda, and salt. In a separate bowl, cream the butter, brown sugar, and white sugar. Add the egg and vanilla extract, then mix until smooth. Gradually add the dry ingredients and stir in the chocolate chips. Drop spoonfuls of dough onto a lined baking sheet and bake for 10-12 minutes, until golden brown.
