Gluten-Free Chili

A hearty and flavorful gluten-free chili made with fresh vegetables, beans, and spices. Perfect for cozy meals, it's both healthy and satisfying.

Ingredients

  • 1 lb ground turkey or beef (optional)
  • 2 cups kidney beans (or any preferred beans)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 can tomato sauce (14 oz)
  • 1 cup vegetable broth
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro (optional)

Instant Pot

Set the Instant Pot to sauté mode. Add olive oil, then cook the onion, garlic, and bell pepper until softened. Add the ground turkey or beef and cook until browned. Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Add the beans, diced tomatoes, tomato sauce, and vegetable broth. Close the lid, set to manual high pressure for 10 minutes, and allow it to naturally release for 5 minutes before venting.

Slow Cooker Method

In a skillet, heat olive oil and sauté the onion, garlic, and bell pepper until softened. Add the ground meat and cook until browned. Transfer everything to the slow cooker. Add the beans, diced tomatoes, tomato sauce, vegetable broth, and spices. Cook on low for 6-8 hours or high for 3-4 hours.

  • Serve with a dollop of sour cream or dairy-free yogurt.
  • Top with shredded cheese or dairy-free cheese.
  • Pair with gluten-free cornbread or tortilla chips.

Storage Instructions

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
