Ingredients

  • 2 gluten-free tortillas
  • 3 large eggs, scrambled
  • 1/4 cup diced bell peppers
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp salsa
  • 1/4 avocado, sliced

Assembly

Warm the tortillas in a skillet. Fill each with scrambled eggs, bell peppers, cheese, salsa, and avocado slices. Roll up tightly and serve warm.
