Blueberry Muffins

These gluten-free blueberry muffins are light, fluffy, and packed with fresh blueberries.

Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup melted butter (or dairy-free alternative)
  • 1 large egg
  • 1 cup fresh blueberries

Oven

Preheat oven to 375°F (190°C). Mix dry ingredients in one bowl and wet ingredients in another. Combine and fold in blueberries. Spoon batter into a greased muffin tin and bake for 20-25 minutes.

Serving Suggestions

  • Serve with a dollop of cream cheese or a drizzle of honey.
